And it’s not something you’ll find sitting on every back bar.
Hilton wanted to experiment beyond traditional gin and create another product that is distinctly ours. So he did what he does best — he experimented. The concept was simple but ambitious: take our gin and mature it in oak.
The barrel, built by Hilton himself, previously held Cabernet Sauvignon wine. The gin rested in oak for 50 weeks, slowly drawing colour, texture and subtle notes from the timber.
It doesn’t fit neatly into a category… and that’s the point!
