Small-Batch Perth Whisky to Sip and Savour
Here in the Perth Hills, we do whisky the proper way, and we reckon it shows. No mass production. We craft our single malt whisky from scratch, distilling in copper and ageing in small, fortified barrels, right here on site. From the malted barley we use to the barrels we fill, every part of the process happens under our roof. Our first whisky release won 2024’s ‘Spirit of the Year’ and yes, it sold out fast. Batch #2? Just 150 bottles made. Same slow method and same big flavour.

Traditional craftsmanship meets a bit of rule-bending. Expect bold character and spirit that speaks for itself. While this whisky would traditionally be drunk neat or on ice, it also happens to produce the best Old Fashioned ever!
Second Batch – Smooth, rich, and full of character. Think oak, vanilla, and a hint of dried fruit.
Perfect serve: Neat or with a splash of spring water.
After the success of Batch #1 being Best Spirit in WA according to WA Good Food Guide, Batch #2 Single Malt Whisky is now ready for consumption and it is at least as good as Batch #1.
The tasting notes are different, there is a distinct caramel butter popcorn aroma, solid caramel and vanilla initial taste, followed by dried apricots and nutmeg with a subtle burnt oak finish. I know some will say I’m crazy (with good reason), and as much as I love a single malt straight up (and I love Batch #2 this way), this one makes the most insane old fashioned. HHH’s first release of Single Malt Whisky, and 'exciting moment after years of planning and working my b*** off' according to our Head Distiller, Hilton. The bottles are presented in the BRAND NEW HHH bottle (a collector’s bottle for sure), contained in a solid oak box and have been wax sealed to remind us of the methods of yesteryear (oh, we love the old stuff)
The taste reflects the reactive climate of the Darling Scarp with dark chocolate, berries, caramel, vanilla, dried apricot, nutmeg; flavours that are rich and fill your mouth and it is smooth, so smooth.
